Cajun Chicken Fettuccine Pasta

Here's an easy and delicious weeknight meal. You can use a rotisserie chicken or cooked chicken breast that you have prepped ahead of time. If chicken is not available, you can use cubes or dice ham. I have used deli ham as well, they are turned out very good!

Serve this pasta with Homemade French Bread or Bread Loaves.



Ingredients:

2  rotisserie chicken breasts (can also use pre-cooked chicken breast at home or leftover chicken breast)
1/2 cup chopped onions
3 tbsp olive oil
1-2 tbsp Cajun seasoning
1 tbsp paprika
1 package of linguine noodles
1/4 tsp ground black pepper

Homemade Alfredo Sauce
2 cups of milk
8 oz cream cheese, softened
5 tbsp butter
1 tbsp garlic powder
1/4 tsp ground black pepper
1 cup Parmesan cheese

Directions:

Cook your linguine noodle according to package instructions. Using a nonstick saucepan, melt the butter, and be careful not to burn it. Whisk in the softened cream cheese and garlic powder. Slowly add the milk, and continue to whisk to dissolve any lumps. Remove from heat when the sauce thickens or when you reached your desired consistency, stir in the Parmesan cheese and pepper. Set the sauce aside.


This is one of the ways that I save time in the kitchen, I pre-cook the meats like chicken breast, ground beef, and ground turkey ahead of time. Place them in a freezer-safe Ziploc bag (don't forget to label the bag along with the date). When a recipe calls for the meat, I can just take a package from the freezer and defrost the bag inside the fridge the night before needing it. 

Designate a prep and cook day. I find it easy to do this after I get home from my grocery shopping day. It takes time and effort but is totally worth it especially on school or busy days.


 Saute your onions with 3 tbsp of olive oil.


Mix in your red peppers and cooked chicken. A few minutes into cooking I realized that I do not have enough red bell peppers. Oops!


Add in your spices -- Cajun, paprika, and ground black pepper,


Mix until all the spices are incorporated with the chicken, about 2 minutes. Remove from heat.
Add in your homemade Alfredo sauce.


Serve on top of your linguine noodles.


See that yummy and creamy sauce.  My girls LOVED it and my husband had a second serving.



Can you imagine how much more flavorful it will be if I have enough bell pepper? For extra flavor, use red onions.
